  • 1.75 g. Brown Sugar
  • 3 g. Kosher Salt
  • 1 g. Dry, Crushed Mustard
  • 5 Tbsp. Crumbled Blue Cheese
  • 1 Tsp. Crushed Garlic
  • 5.25 g. Worcestershire Sauce
  • 1 Cup Mayonnaise
  • 4 Tbsp. Buttermilk
  • 1.5 Tsp. Fresh Squeezed Lemon Juice
  • 2 Tbsp. Distilled White Vinegar

Recipe Instructions: Simply get out your bowl, whisk, measuring cups and spoon, and scale and mix in the ingredients! I recommend mixing your metric ingredients first, (like the kosher salt) first. This will get the math out of the way so you can use your measuring cups and spoons for the easy part! Once all of your ingredients are in the bowl, whisk to combine and taste for flavor! I wouldn't keep this in the fridge any more than a week for best freshness. Serve with some epic fried chicken wings and enjoy!

But for me the store bought stuff never seemed to scratch the itch that incredibly fresh restaurant quality blue cheese dressing could.

However, no one wants to buy a whole meal just to eat some blue cheese dip! That’s why I sought out how to make the restaurant quality stuff at home!

I learned this recipe from a buddy who worked at a restaurant named Paulette’s Restaurant which resides on Mud Island in Memphis, Tennessee.

It overlooks the mighty Mississippi River and has been a staple in the Memphis community for many years, and is still a popular place today!

Well, my friend shared with me their proprietary blue cheese dressing recipe, straight from the chef’s prep station!

After parsing out the quantities (they make this stuff by the gallon at Paulette’s, which is too much for me!) I realized I had something special on hand.

This is one of the simplest recipes to make, since it doesn’t require any specialty tools in order to make it!

All you need is a mixing bowl, a whisk, and some measuring spoons if you want to be okay with your measurements.

I picked one up some years ago and they’re honestly incredibly useful. I use mine every single time I cook, since it measures volume and weight in both metric and imperial units!

Look, I got this recipe from a waiter at a famous restaurant in Memphis where they make this stuff by the actual gallon.

So, I had to sit there and do some math in order to make a reasonable replica of this stuff.

That’s the value you get out of this!

If you want to make this the right way, you really need to invest in a kitchen scale so you can weigh out the ingredients correctly.

There really isn’t a replacement since measuring spoons don’t really capture the accuracy that you want for this recipe.

The metric system is simply better than the imperial system and has more graduated levels to be more precise!

I do apologize, however, because I found it difficult to keep this recipe entirely metric or imperial.

I had to switch back and forth, so please do try your best and use good judgement! If you need to, use Google to swap between metric and imperial for the best results.

Regarding the purpose of this blog, the uses for this blue cheese dressing will mostly be for dipping some crackly fried chicken wings into!

However, you can also use blue cheese for any of the following foods:
